Make it a Meal

2b. Slow, moist, and tender

You can turn your barbecue beef sandwich into a complete meal by choosing one or more foods from the following categories. On the foods that have a * beside them, click on the name for the recipe below.

Macaroni and cheese

Instructions

  1. Follow the manufacter's instructions and cook macaroni in a medium saucepan. Add diced onion to the water and uncooked macaroni.
  2. When macaroni is done, remove from heat. Test macaroni for doneness by removing one piece, let cool, then taste. The middle should be soft, not chewy.
  3. Place a colander in the sink and carefully drain macaroni. You may need an adult to help you with this step. Hot water can be dangerous and cause burns.
  4. After draining, pour macaroni back into saucepan.
  5. Add cheese and milk. Stir together. It is best to use a wooden spoon. Sprinkle a little bit of pepper into the mixture.
  6. Place saucepan on stove over medium heat. Stir and cook 4 to 5 minutes, or until cheese is melted.
  7. Remove from heat. Transfer macaroni and cheese to serving dish. Serve.

 

Fruit Crumble

  1. Preheat oven to 375°F.
  2. Add the pie filling and almond extract to a 2-quart square baking dish. Gently stir with a wooden spoon until combined. Spread mixture so it evenly covers the baking dish.
  3. Put graham crackers into a large sealed plastic bag. Use a rolling pin to finely crush the crackers. The crushed crackers should measure 2/3 cup. Place them in a medium size mixing bowl.
  4. Place butter in a small saucepan over medium heat. Cook until butter is completely melted. Add to the mixing bowl.
  5. Add oats and brown sugar to the mixing bowl. Stir mixture with a fork until it is well mixed. Sprinkle mixture over pie filling in the baking dish.
  6. Bake at 375°F for 20 minutes or until crumbs are lightly browned.
  7. When done, remove from oven and cool for about 30 minutes. Serve delicious fruit crumble warm with vanilla ice cream.

 

Apple-cherry crisp

  1. Preheat oven to 375°F.
  2. In a large mixing bowl, combine oats, pecans, flour, brown sugar, and cinnamon. Stir with a wooden spoon until well combined.
  3. Add the melted butter. Rub the oat and butter mixture between your fingertips until it is well blended.
  4. Using a cutting board, carefully peel the skins off the apples. Then cut each apple in half lengthwise. Remove seeds and cores. Then place each half flat side down and cut into thin slices. Place the slices into a 1 1/2-quart round casserole dish.
  5. Add dried cherries, cranberries, or raisins to the casserole dish. Mix together.
  6. Sprinkle the oat and butter mixture on top.
  7. Bake at 375°F for 50 minutes. After 50 minutes, begin checking for doneness. Do this by removing the dish from oven. Carefully insert a fork into crisp. If the apples feel soft, it is done. If the apples do not feel soft, place casserole back in oven, bake 5 more minutes, then check. Repeat until done.
  8. When done, remove from oven and cool for 15 minutes. Serve with vanilla ice cream or frozen yogurt. Enjoy!

 

Frozen vegetables

Mashed potatoes

Instructions

  1. Rinse potatoes and scrub with a vegetable brush. Pat dry.
  2. Use a vegetable peeler and peel off the skins.
  3. Carefully use a knife and cutting board and cut the potatoes into large pieces.
  4. Pour the water into a medium size saucepan. Cover saucepan with lid and place over medium-high heat. Heat until water begins to boil.
  5. Add potatoes to boiling water. Again, cover saucepan and heat until boiling. When the water begins to boil, reduce heat just enough so that the water bubbles gently. Cover with lid and cook 20 to 25 minutes or until the potatoes are soft with poked with a fork.
  6. Remove saucepan from heat. Carefully drain into a colander over the sink. You may need an adult to help you with this. Boiling water is dangerous and can cause burns. Place the potatoes back into the saucepan. Put saucepan over low heat until water has disappeared.
  7. Use a potato masher and mash until potatoes are smooth and there are no lumps. Begin adding the milk, a little bit at a time while continuing to mash.
  8. Add margarine, salt, and pepper. Mash until completely mixed.
  9. Transfer your mashed potatoes to a serving bowl and serve.

 

Fruited ice tea

Instructions

  1. Fill a tea kettle half full with water. Bring the water to a boil on the stove over high heat.
  2. Place the tea bags in a large mixing bowl.
  3. When water comes to a boil, turn off the heat. Using the help of an adult, fill a 2-cup liquid measuring cup with water. REMINDER: Boiling water is very dangerous and can cause burns. Do not do this step yourself.
  4. Let the water and tea bags sit in the mixing bowl for 5 minutes. Use a spoon and remove the tea bags.
  5. Add sugar to the bowl. Mix until it completely dissolves.
  6. Add the fruit juice. Stir well.
  7. Cover with plastic wrap and set in refrigerator so the tea can cool.
  8. After it is cool, serve your delicious fruited ice tea!

 

Cookies-n-cream cake

Instructions

  1. Preheat oven to 350°F.
  2. Grease the bottom of a round cake pan, 8-9 inches across, with shortening. Add the 2 tablespoons of flour to the greased pan. Shake the pan to coat the sides with flour. Pour out any extra flour.
  3. Using a cutting board and small knife, carefully chop the 8 chocolate sandwich cookies into medium size pieces. Set aside.
  4. Crack the egg into a large mixing bowl. Add flour, sugar, sour cream, margarine, water, baking soda, and baking powder. Beat with an electric mixer on low speed for 30 seconds. Scrape the sides of the bowl. Beat on high for 2 minutes.
  5. Add the chopped cookies to the batter. Use a wooden spoon and stir just until mixed. Pour the batter into the cake pan. You may need to use a spatula to spread batter evenly.
  6. Bake at 350F for 30 to 35 minutes. Allow the cake to cool in the pan for 10 minutes. Then take the cake out of the pan and cool on a wire rack.
  7. When cool, spread frosting over the cake. Decorate your cake with chocolate sandwich cookies.
  8. Serve.

Chocolate brownies

  1. Preheat oven to 350°F.
  2. Place 2-3 cups of water into a medium saucepan and heat until hot, but not boiling.
  3. Put the butter and chocolate into a medium size bowl and allow it to sit on top of the saucepan. Make sure that the water does not touch the bottom of the bowl. Allow bowl to sit there until both butter and chocolate have melted. Remove bowl from saucepan and remove saucepan from heat. Be careful, the bottom of the bowl may be hot.
  4. Stir the sugar into the butter and chocolate mixture. Set aside to let mixture cool.
  5. Prepare a 7-inch square cake pan by cutting a piece of wax paper so that it will fit in the bottom.
  6. Beat the eggs into the mixture. Then stir in the flour and nuts.
  7. Pour the mixture into the lined cake pan.
  8. Bake at 350°F for 25-35 minutes or until firm around the edges, but slightly soft in the center.
  9. When done, cut into nine squares. Let cool, then sprinkle confectioner's sugar on the top. Serve.
