1. Compare the two cakes you made for flavor, appearance, and texture.
Cake 2 (made with applesauce) will be slightly drier, less tender, and will have more crumbs than Ckae 1 (made with vegetable oil). Cake 2 may also be less sweet than cake 1.

4. What other ingredients can you substitute to make lower fat food products?

  1. Instead of sour cream, you can substitute plain low-fat yogurt.
  2. Instead of whole milk or cream, you can use buttermilk or 2% milk.
  3. Instead of regular vegetable oil, you can use olive or canola oil.
  4. Instead of using shortening to grease baking sheets and pans, you can use a non-fat cooking spray.
