Italian Recipes

 

Here are recipes from Italy. The first few recipes are pasta sauces Italians add to their homemade noodles. Pick one and try it! Click on the name to see the recipe below.

 

Pasta Sauces

Italian Tomato Salad

Pesto

Instructions

  1. With the help of an adult, put the basil, sunflower seeds or walnuts, and crushed garlic cloves into a blender or food processor. Blend until all the leaves are chopped.
  2. Add oil. Blend or process until smooth. Sometimes you have to stop the machine and scrape the sides with a spatula, then blend again.
  3. Add cheese, salt, and pepper.
  4. Transfer the pesto to a large serving bowl. Serve over your homemade noodles.

 

Sage Sauce

  1. Put butter and sage into a small saucepan.
  2. Heat over low heat until butter is melted. Gently stir mixture.
  3. Remove from heat and serve over your homemade noodles.
  4. Add Parmesan cheese for a delicious meal!

 

Rosemary Sauce

  1. Put butter and rosemary leaves into a small saucepan.
  2. Heat over low heat until butter is melted. Gently stir mixture.
  3. Remove from heat and serve over your homemade noodles.
  4. Add Parmesan cheese.

 

Quick Marinara

Instructions

  1. Put oil and crushed garlic cloves in a medium-size saucepan.
  2. Heat over medium heat.
  3. When the garlic begins to sizzle, add the can of tomatoes. Be careful to add the tomatoes slowly to keep the oil from splashing. Hot oil can easily burn you.
  4. Add the sliced carrot to the medium saucepan.
  5. Cover the saucepan and let simmer for approximately 20 minutes.
  6. After simmering, add a pinch of oregano, basil, and salt and pepper to taste.
  7. Serve over your homemade noodles and enjoy!

 

Italian Tomato Salad

  1. Put the sliced tomatoes into a large serving bowl.
  2. Add chopped garlic, oregano, onion, and basil leaves.
  3. Mix well.
  4. Refrigerate for at least one hour.
  5. Before serving, add oil and salt and mix well.

 

Risotto Primavera

Instructions

  1. In a large saucepan, melt butter over low heat.
  2. Add celery, shallots or green onions, garlic, and pepper to hot butter.
  3. Stir and cook over medium heat until vegetables are tender.
  4. Add uncooked rice to saucepan. Stir and cook for 2 minutes.
  5. Stir in chicken broth and water. Be careful as you pour in so that the hot butter does not splatter onto your arms or face.
  6. Bring mixture to boiling. Reduce heat to low.
  7. Cover and let simmer for 25 minutes. Do not lift cover during this 25 minutes.
  8. Remove from heat. Stir in peas, squash and zucchini, and lemon peel.
  9. Cover and let stand for 5 minutes.
  10. Serve this wonderful Italian rice and vegetable dish immediately!
